Cocky Business: Mackenzie Harris Corbin (‘17) — Serving Sweet Treats and Fun Surprises at Mad Hatter Cupcakes

Mackenzie Harris Corbin (‘17) has been serving the Jacksonville, Alabama, community at Mad Hatter Cupcakes since she was a student at Jax State. When the opportunity to purchase the business came in 2023, she couldn’t pass it up.

“It always held a special place in my heart,” Corbin said. “I loved the idea of keeping this local favorite thriving and continuing the tradition of bringing a little sweetness to our community.”

Mad Hatter Cupcakes specializes in themed cupcakes, featuring weekly flavors as well as cookies, homemade marshmallow bars, custom cakes and cake pops. Gluten-free options are available as well.  

“Mad Hatter stands out because we’re always coming up with something new,” Corbin said. “Our weekly featured flavors are one-of-a-kind and often a little quirky, which keeps things fun. Our themed days have become a favorite tradition and give our customers a chance to experience something special each time they stop by.”

Cupcake themes are inspired by holidays, seasonal flavors, pop culture events, or just for fun to surprise customers. One of the most popular cupcakes is the Rocky Cocky — a red velvet Oreo-flavored cupcake prepared especially during football season.

“For 15 years, Mad Hatter Cupcakes has been a beloved local spot and a place where everyone is welcome,” Corbin said. “As a woman-owned business, it’s important to me to continue building something special. We’re always brainstorming and growing.”

She says it is a combination of passion, curiosity, and a commitment to make a difference that drives her. “Every accomplishment comes from caring deeply about the work I do and the people I serve,” Corbin said.

The most rewarding part of her professional journey has been building connections within the community. “Every step of my career has led me here, giving me the opportunity to create a welcoming space and provide sweet treats for people to celebrate all of life’s milestones,” Corbin said. “Seeing the happiness and memories we help create is incredibly fulfilling.”

She credits Jax State for the strong foundation of business knowledge and professional skills she gained, including encouragement from her instructors to reach higher and believe in herself. “I felt seen, encouraged, and empowered every step of the way,” Corbin said. 

“Jax State shaped me into a confident and professional individual,” Corbin said. “I’m proud to share that I’m an alum and that I’ve stayed in Jacksonville to grow my business and contribute to the community that supported me. The lessons and connections I gained continue to guide me every day.”

Corbin says she hopes people will visit, whether they are celebrating something big or just stopping by for a little pick-me-up. 

“I want Mad Hatter to feel like a place where everyone belongs and leaves a little happier than they came,” Corbin said.
